Rachael Ray, Apple Crisp, and the Benefit of the Doubt

On Rachael Ray, foodie pretentiousness, and oats in apple crisp: “…if you have a dessert recipe that is delicious and also just happens to contain something nutritious, why in seven hells would you exchange that ingredient for something less nutritious, and less delicious??”

My Chicken Ritual

Chefs and home cooks alike are constantly waxing poetic about the joys of roasting a whole chicken. And even though it’s also one of my favorite preparations, I’ll spare you my own musings about why a roast chicken is so gratifying. Instead, here’s a glimpse into my culinary psyche.
